MAYO-FREE TUNA SALAD
Here’s another flexitarian recipe! I LOVE tuna salad but my stomach doesn’t do too well with the mayo. It’s half GI and half mental. They have vegan mayos, but read the ingredients with those… they’re not always “healthier” and sometimes just have a bunch of chemicals in them.
So here is my alternative! (Not vegan by any means) Mayo free tuna salad on an onion roll.
INGREDIENTS:
- Canned tuna
- 1/2 avocado
- 1-2 tbs plain greek yogurt
- chopped apple, 1/3
- chopped onion, 1/4
- crushed almonds or walnuts
- salt and pepper
Mash everything up in one bowl and just keep mashing! Serve on your favorite bread or cracker?
If you’re storing your tuna salad in fridge, keep the avocado pit in with tuna salad to help the avocado from turning brown. Avocados are super high maintenance like that…
